Now let's get this thing rolling!








OK!
I've been sufficiently lazy, so it's about time to get this blog rolling. My computer has been kind of schizo lately, so it's been overheating like CRAZY. Let's hope I can finish this large post before I fry it.

Since coming home, I've been cooking A LOT. I love it, cooking is one of my favorite acitivites. This was my family's first exposure to vegan cooking, as I converted to veganism while away at college. While I DO still cook some omni meals for them, most of the time it's just "eh...I'll have whatever you're having." and with good response. They won't ever make the switch, I'm sure, but I can easily cook veg here.

Before I get to what I've been eating, let's do a small product review.

Gardenburger:
I was eating their plain burgers at school, and they were pretty good. I know, convenience food isn't great, but with my family it works. I tried the Sundried Tomato Basil burgers, and was thoroughly unimpressed. They were nasty. It was a ricey, extremely unappealing texture. Dry, and just...ew. On the other hand was riblets. WOW. I adore these things, and have eaten them four times in the past week. They are delicious, and taste scarily like the real thing. That put me off a bit, I never liked ribs even as an omni. They tasted EXACTLY the same, texture, sauce, everything. Thoroughly delicious. If you have not tried them, go, now!

Tofurkey:
I'm not a fan of tofu. I have never had a good experience with tofu, and I am terrified of it, and will not attempt to cook it. I tried the Tofurkey Kielbasa sausages, and they were pretty good. Texture wasn't really like real sausage, but that's fine. I'm not looking to "replace" real meat. It was a little squishy for my tastes [cooked on a grill] but dipped in some barbecue sauce, it wasn't bad. I will buy these again, but not jumping for joy like the riblets.

I'm having issues formatting...so the pictures above are a few meals I've been eating.
First, one of my new favorite sandwiches. Avocado, cherry tomatoes, green olives, salt and pepper on whole wheat bread. Served with Honest Tea...a very yummy organic tea my mother is fond of buying.

Burrito pie and guacamole....didn't get to take a picture before the family started in on the guac! The burrito pie recipe was taken off of vegweb. It was quite delicious, and just as good the next day. If anyone is making it, I suggest using corn tortillas. The whole wheat ones were a little too soggy, corn turned out just right. The guacamole is a homemade concoction of lemon juice, avocados, salt, pepper, red pepper flakes and salsa...fresh tomatoes are fine, I just didn't have any on hand. Served with blue corn tortilla chips (my personal favorite)


Last picture I took, was supposed to be a soup..but it just didn't work out. Haha. It still tasted delicious. A homemade tomato sauce, whole wheat pasta and kidney beans.

Other than that, it's been a repeat of veggie burgers, ribs, peanut butter sandwiches (found a new brand that I LOVE) and rice and beans. Boring, a bit, but I love the simple things. My camera batteries died, so I didn't get many pictures =[

Better updates soon! As soon as I get this computer issue figured out.

Vegan college food...oh the horror.

I guess I should start this thing out with an introduction. How I HATE introductions...like I haven't done enough of them, myspace, facebook, bodymod, livejournal and all of the other online communities I belong to, yet I still hate them.

The name is Caiti, and I am a college freshman. I am tattooed and pierced, an animal lover, music nerd and black sheep of the family. Oh how I love it! My major is Music Industry and my minor is Audio Arts Production. I play guitar and piano [although piano is a miserable failure!] Back home, I have two dogs, a pug named Bella and a Shih Tzu/Lhasa Apso named Benji, and also two quarter horses, Vigil and Andy.
I love pretty much all kinds of music, from Hank Williams and Bach to Cradle of Filth and Nickelback. I like EVERYTHING! I love travelling, but haven't done much. Broadway musicals are pretty kick ass too, I've seen Phantom of the Opera twice.

Yeah. Wow. I sound like such a nerd. Ohhh well.

I've been vegetarian for about six months, and vegan for about a month. Yeah, not much, but we all start somewhere.

What inspired me to start this blog was the incredible crap-tasticness of college food. Hell, "normal" students have a hard enough time trying to eat something other than burgers and pizza everyday, throw being vegan on top of that and it's pretty tricky. I think I have eaten enough chickpea and olive salads, and rice and beans and really nasty, squishy tofu to last me a lifetime. I have nothing against tofu, really! It can be okay...certainly not my favorite food, but they do NOT know how to cook it here. They just chuck a block of undrained tofu into whatever they can think of. BLEHHHH! Haha anyways...

That's me. Oh, and don't be expecting any pictures until I get home in two weeks. On my last trip to New York City my camera died a painful death.
